Mini Cheesecake Tarts



Ingredients
*2 8 oz. packages cream cheese
*3/4 cup sugar
*2 tablespoons flour
*1/4 teaspoon baking powder
*2 eggs
*1 tablespoon fresh lemon juice
*1 1/2 teaspoons vanilla
*12 Nilla Wafers cookies
Directions:
pre heat the oven to 375
With an electric mixer, beat cream cheese and sugar.  Add in flour and baking powder and beat to combine.

 
Fill a muffin pan with foil liners and place one Nilla Wafer in the bottom of each.  Divide batter between 12 muffin papers, filling each cup up to about 1/4 inch from the top.  Bake for 15-18 min. or until a toothpick is inserted into the middle and comes out clean.


Ainsley and I were going to make something for Ainsley's Orchestra party.  So, we looked through "Our Best Bites" and found this recipe.  We had to make 32!  So we used mini cupcakes.  But, we didn't have Nilla Wafers.  Instead we used graham crackers.  If you use our way they can get a little messy.  They are still delicious!!

Pumpkin Bread





Ingredients
*pumpkin 15 OZ.
*5 eggs
*1 1/4 cups vegetable oil
*2 cups flour
*2 cups sugar
*2 packages of 3 oz. vanilla pudding mix
*1 teaspoon baking soda
*1 teaspoon ground cinnamon
*1/2 teaspoon salt

MAKE SURE YOU PUT IN THE RIGHT AMOUNT OF PUMPKIN OR YOU WILL HAVE TO DOUBLE THE RECIPE!!!!!


Directions:
pre heat oven to 325 degrees
mix ingredients

pour into give 5 greased mini. bread pans
bake for 50-55 min.
The reason we made the words bold above is because Ainsley put all of the pumpkin in instead of just 15 oz.  (she usually messes up)  So we had to double it and use a giant bowl!

Anyway, we shared it with our class and they loved it!  They wanted more.  So if you make this for a party or thanksgiving, make sure you have a lot!

Sugar Cookies (with homemade frosting)

Ainsley was flipping through a cook book and said " I want to make classic Sugar Cookies" but I wanted to make homemade frosting to go with it.  The Sugar Cookie recipe is from Our Best Bites.

Ingredients: 1 cup of butter
1 cup of sugar
1 egg
1 1/2 teaspoon of vanilla
3 cups of flour
1 1/2 of teaspoons baking powder
1/2 teaspoon of salt

Pre heat oven to 350. partly melt butter.  Add other ingredients. Mix Well.  Put in fridge for 30 min. or put in freezer for 15 min.  Roll out and cut into shapes.  Bake for 8-10 min.  Frost and eat.

Ooops!  Don't make them too thin!

Frosting
4 cups powdered sugar
2 cubes butter or margarine
3 tbsp milk
1 tsp vanilla
food coloring




Mix together with an electric mixer until smooth.  Frost.

Pumpkin Chocolate Cookies


 This week we made a Halloween treat.  They hardly have any ingredients so they are easy to make.







Ingredients:
one box of Chocolate Chip Cookie mix (DO NOT PUT IN EGGS, WATER, BUTTER OR OIL!!!)
one cup of pumpkin

PRE heat oven to 375
Mix the mixture well
Spoon onto cookie sheet
Bake 10 minutes

Chocolate Pretzel Cookies

Super easy to make, fast and delicious!!!!!
Ingredients: pretzels, chocolate (rolo york etc.) and m&m
How to make:
pre heat oven to 350
place pretzels on cookie sheet
unwrap chocolates and place on pretzel

place in oven for  3 min.
while they are cooking clean up your wrappers so your mom doesn't yell at you
gently press an m&m on the chocolate while it is still warm

Fruit Kabobs and dip

Ingredients for dip: 3 spoon fulls of greek yogurt
1/4 cup brown sugar
1 spoon full of peanut butter
mix well
Fruit Kabobs: first you go to the store and buy around four different fruit.(grapes, watermelon, pineapple ect.)
Next get a stick.
Then cut the fruit and stick it on the stick.
Last but not least, dip your fruit kabob in the dip and feed it to your 88 year old great-grandma while she is falling asleep.

Ants on a sour log

It all started when Ainsley's mom said don't make something sweet. So we decided to make an after school snack. All you'll need is pickles, peanut butter, raisins, and peanuts.
Instructions: Slightly cut a pickle open and put peanut butter in it. Then put your raisins and peanuts on the peanut butter. ENJOY!!!!
